Capers

Caper is the edible bud of Cappasis spins, which is a wild growing plant.

Capers are handpicked between June – August and are transferred to the facility for processing. After calibration capers are prepared as in brine or salted or as paste per customer’s request.

Capers in Brine or in Salt are available with different sizes as below, small sizes tend to be rarer and valuable.

Sizes of Capers:

  • 3-5 mm: Lilliput
  • 5-7 mm: Non-pareille
  • 7-8 mm: Surfine
  • 8-9 mm: Capucine
  • 9-11 mm: Capote
  • 11-12 mm: Fine
  • 12+ mm: Horse

Packaging can be in Jars, Tins, Buckets, Drums in various sizes.

Caperberry

If caper buds are not picked, they blossom in to Caperberries. They are harder than capers and have seeds. Caper berries are typically sized in to three groups; 0-15 mm, 15-18mm and 18-22 mm.
